
Offerings
We have 3 different vintages to offer. Here is some information on the different bottlings that we would like to share with you. Every year is different, the weather, the precipitation, and the amout of the sun light. Each year our batch of ciders are all different also.
2020 Vintage

Farm: The Philo Apple Farm, Boonville
Farming Practices: Organic (currently practice Biodynamics)
Varietal: Field Blend: Philo Gold, Sierra Beauties, Northern Spy, Wickson, and Winesap
Cidermaking: Native Primary and Secondary fermentation. Pressed and fermented in neutral white wine barrels for 5 months before bottling. No sulfur added
Description: Still Cider. Basque style. Initial aromatics of savory minerality and chalky aromatics to follow with herbal lemon grass. More linear and strong acidity. Bottled with some solids to add creaminess. Decanting is an option.
2021 Vintage
Farm: Meyer Farming, Sebastopol
Farming Practices: Organic
Varietals: 70% Arkansas Black 30% Winesap
Cidermaking: The different varieties were pressed one week apart. Minimal intervention and minimum SO2 added at crusher. Pressed and fermented in 3 neutral white barrels. Native yeast assisted with inoculation for primary fermentation. Small percentage of MLF occurred naturally. Bottled after 5 months in barrel. Bottle conditioned to targeted 5atm, or closer to sparkling wine.
Description: Initial aromatics of clove and nutmeg. Captures what the harvest time smelled like during pressing with dark red apples flora. Medium to low acidity on the entry. Christmas spice flavors carry the mid palate with medium texture and phenolics without bitterness. Vanilla creamy finish

2022 Vintage

Farm: Devoto Garden and Orchards Sebastopol.
Farming Practices: Certified Organic, Dry Farmed
Varietals: 100% Black Twig
Cidermaking: Minimal intervention and minimum SO2 added at crusher. Pressed and fermented in 3 neutral white barrels. Native yeast assisted with inoculation for primary fermentation. Small percentage of MLF occurred naturally. Bottled after 5 months in barrel. Bottle conditioned to targeted 5atm, or closer to sparkling wine.
Description: Tropical fruit aromas up front with minerality hidden in the back. Medium acidity on entry. This cider has fine texture on mid palate and creamy long finish.
